I import truffles and truffle products. These are truffle breakings. The name comes from the little pieces that may break off when a truffle is brushed clean(ergo, "brisura").

The Preserved Truffles may come whole, in pieces or in breakings, but its perfume is always the same! The choice of presentation will depend on the recipe you have selected. There is no point in buying a whole truffle if you want to prepare a stuffing.

pieces of truffle
The undamaged sides serve to make „morceau de truffes“ ( pieces of truffle) while the others are serve to make „brisure“ ( fragments of truffle), provided that they are in a satisfactory state, otherwise they serve as „seeds“ to make trufflecultures
