establish vehicles for transmitting (it)

"Create" would do perfectly well as an alternative for "establish", and "transferring" could certainly be used, though I prefer "transmit" when referring to passing on knowledge. "Channels" might be used instead of "vehicles".

"Instancia", as you suggest, must be some kind of entity. Here are the meanings of instancia as defined in the DRAE. (They don't seem to include anything corresponding to "instance", though "instancia" is used in that sense in "en primera instancia" and "en última instancia"):

"instancia.
(Del lat. instantĭa).
1. f. Acción y efecto de instar.
2. f. Memorial, solicitud.

The only one that really fits this context is no. 6, and I think that's what it must mean.

But I think it could refer to any kind of entity that serves to promote the tranmission or transfer of ancestral knowledge, so I would use either "vehicles" or "channels". I think "vehicles" may be slightly more accurate, in that it suggests some kind of institution, whereas a channel could be just a route.

Examples of "instancias de traspaso" on the Internet seem to come mostly from Chile:

"Aumentar las instancias de traspaso de información y discusión públicas, como las mesas de diálogo."

(There's a pdf of this but I can't get it to open at the moment)

Here one of the "instancias" is a publication:

"Así mismo tenemos otras instancias de traspaso de información que son apoyos valiosos como la edición del boletín comercial de berries"

"As textbooks are one of the most common vehicles for transmitting knowledge from one generation to the next"

agree Andy Watkinson : Transmit. ("Transfer of knowledge" is IT-speak).

Yes, my gut feeling is that it should be "transmit". Many thanks, Andy, and a belated Happy New Year :)

create opportunities for transferring

Literally "moments for transferring" but I prefer "opportunities":

it is important to create opportunities for transferring this knowledge to the next generations

Could be but I feel then it would more likely be "instancias para el traspaso"
Note from asker:
Thanks, Simon - I was also thinking that 'instancias' could be some kind of 'body' or group assigned with the task of transferring this knowledge. What do you think?

establish mechanisms of transference

Using transference instead of transferring eliminates the need to have an object after the verb.
