This is the dish:

Glace de viande aux framboises et vinaigre de champagne,
Parfum de banane à l'aigre-doux,
Jeunes légumes de saison
I don't know if the "parfum de banane" relates to the glace de viande or if it is another side dish (bananas??) Any help in unraveling this mystery would be greatly appreciated! :-)

: I prefer 'sauce' to 'salsa' because I associate chunks of food with 'salsa' and ' parfum' doesn't evoke bits of banana, but as it's listed as a separate item on a menu, maybe it's more substantial than 'essence' or 'flavour' which would be more correct?

: I really cannot fathom what Adil's being a man has to do with his competence on commenting about perfume. Most perfume creators are men (and even though it is commonplace to feel that women consume perfumes more, men are really not so far behind)!

: oui, mais "aigre-doux"? cela ne semble pas du tout à une aro^me ou un parfum. Il me semble que c'est certainement quelque chose que l'on sert à part, et qui ne fait pas parties des ingrédients du pla^t principal. Aussi dans votre sens parfum = "essence".

Further to my brief answer to the asker above, I would like to add that French chefs have come up with ever increasingly imaginative ways of describing the most mundane of foods, I have seen (in Switzerland) the following: \"pommes juliennes frites au parfum de tomates doux\" to mean \"French fries with ketchup\"!!!

Continuing my comment to DocteurPC, I would like to point out that an \"essence\" is an ingredient and cannot be SERVED separately. At this rate, the menu would have to list all the ingredients of all the dishes! I don\'t believe that is the intention of the original author of the menu. Otherwise one would wonder why \"butter, oil, etc.\" has been left out and only \"banana essence\" (sweet and sour at that!!) mentioned. Also, I don\'t believe that anything known as \"sweet and sour banana essence\" is commercially available!

: You might be onto something here. Hadn't heard of "banana chutney" before but, after a spot of Googling, I found a recipe for "Ginger-banana chutney" which would indeed be sweet & sour.

There is nothing awful about banana chutney!! It is an oriental "taste enhancer" like a pickle, generally made of tamarind sauce, date paste, sugar, vinegar and banana pieces. Very commonly served with South Asian food.

The only problem with this suggestion is that "sweet and sour banana condiment" sounds exceedingly odd on a menu. I have never seen the word "condiment" used to denote a side-dish in English.
