Copy the text in Word Feb 3, 2004

It should be quite simple. Just select and copy the whole content of each worksheet (tab) and paste them, one by one, into a Word document.

It will take the format of Word tables, but the formatting should not be relevant for your purposes.
Once the text is in Word, you can also delete any content that you don't need to count.

Now run the word count in MS Word (Tools > Word count), and it will display the two character counts too, one with spaces and one without

It is a quick solution Feb 3, 2004

Unless you have a very large number of Excel files, each of them with a very large number of tabs.

In that case some operations may be automated writing a macro.
This solutions is also time consuming (if you write the macro yourself) or expensive (if you hire a VBA programmer) but, I wonder if this is really justified in your case?

How many files and tabs do you have?
