The panned processes can be divided into four general types: hard panning; soft panning; chocolate panning; or a combination of these processes. Panning, in a broad definition, builds layers of a coating material around a center material. The coating usually consists of carbohydrate- or fat-based material. This layering is generally accomplished in a rotating pan or drum, using heating or cooling to dry or set the coating. A polishing step sometimes follows to provide sheen or protection, and color and flavor may or may not be a part of the process. In functional products, other ingredients — vitamins, herbs, antacids, etc. — can make up a portion of the coating.

Aunque esté enfocado hacia la industria alimentaria, el proceso de grageado es el mismo para la forma farmacéutica llamada gragea.
