This layering is generally accomplished in a rotating pan or drum, using heating or cooling to dry or set the coating. A polishing step sometimes follows to provide sheen or protection, and color and flavor may or may not be a part of the process. In functional products, other ingredients — vitamins, herbs, antacids, etc. — can make up a portion of the coating.
