rémunération à la masse

French to English Bus/Financial Finance (general) Payment of hotel staff
I would welcome some help with this term. The context is a text (private letter) referring to different methods of paying hotel staff - paiement au pourcentage, which I presume is percentage payment, also known as "rémunération à la masse."

The sentence is:

"L'abandon du système de rémunération au pourcentage des salariés (dit rémunération à la masse) ...

The text also mentions "répartition de la masse."

I know that "masse" can mean payroll, but that doesn't seem to make sense here. I also know that French bills include a 15% service charge, which is then shared out among the employees.

percentage-based vs. fixed remuneration (UK 'on the lump')

The asker seems to have answered her own question with perdcentage payment.

In the UK bulding trade, the Inland Revenue - now known as the HMRC - acceptss or used to accept tax assessments for navvies on building sites working 'the lump' system. The employers used to pay 'lump sum' tax, regardless of how many labourers joined and left the site and for how long.

profit sharing

It exists. It seems like a reasonable fit here, given the explanation. But I put low confidence because I would have expected them to say it differently in French if that's what they meant.

remumeration based on tips

tips are collected on a weekly, monthly basis (whatever) and distributed among the restaurant employees...so it is a calculation based on revenue (tips)...

Dispense with the parenthesis and have the EN translation just be about abandoning the system of paying staff based on a "percentage of the gross".

Time-honoured expression, esp. in Hollywood.:-)
