Not sure whether this is translated literally (management of the walms???)
This is from an article about an investment fund manager who bought a restaurant chain, "a vendu une partie des murs du restaurant," and used the proceeds to buy new restaurants. The second occurrence is:

"L'idée est la même chez XXX ou chez YYY que chez ZZZ: on achète l'entreprise, on externalise la gestion des murs et, avec le cash ramassé, on investit dans le développement et l'on revend cinq ou sept ans plus tard", explique-t-il.

managing the premises

Since it's not a lease (in this case it would be managing the leases) and he owns the 'murs' (=the premises) and subcontracts the adminsitration of them

expl. only

murs = ownership without usufruct. in this case, they sell the buildings but then lease them back to continue to use them. teh management which is "outsourced" is only the one inherent to the property and not the use. Premises management looks rather as the management of everything within the premises which is not directly linked to its operation (for. ex utilities, maintenance...).

I agree with Busterk with one bemol : I think that the "wall manager" has the legal right to lease the outside of the "walls" for exterior advertising ou installation of antennae on the roof etc ...
The idea is really to get the most of an asset that is often not contributing much to the profits when running the business the traditional way.

(outsource the restaurant operation)

I think this means not just managing the property but also the business. For example, the investor buys the restaurant but does not run it, and contracts a restaurant company to operate it. Then a few years later he sells it.
