My client uses the term runners for pattini, usually parzializzare can be many things, I do not think it may be translated with "shutter" in this case........

Hi Giovanna
I wonder whether your customer uses "runners" because it's a quick dictionary definition for "pattini" (so it may not be an appropriate translation). The expression is often used in my experience simply to denote that the parts in question are slideably positionable. A more neutral word such as "device" or, as I have suggested "block" may be better. Note that the expression "slideblock" is sometimes used to translate "pattini". As for "parzializzazione", I guess you could refer to the flow of flour with something like "flow regulator", "output regulator" or, as I suggest above, "flow divider". All these ideas have been conceived in my few remaining braincells and have no direct relationship with the specific field in which you are working, so I am assuming you have already searched for similar machines and have been unable to find an English description of such a specific system (not unlikely inmo).
On the other hand, if the customer has used "runners" in the past
then presumably this term will be perfectly acceptable in your translation.
