Sounds to me as though you're describing a sheetmetal pressing system and, in your context, "sfondamento" seems to simply refer to the excursion (plunge) of the Teflon-coated punch so that different pressing depths (and hence container - vaschette? - tray/tank/well - depths) can be achieved.
