Thanks a lot for your help!

Yes, double-side grooved plates would mean that they are each grooved on both sides. (Any plate is double-sided.)
Frank Szmulowicz, Ph. D. Dec 10, 2016:
I found that Wirtz used the word grooved plate. Ridged/grooved/channeled upper/movable and lower/fixed pill-forming boards would be quite descriptive.

In Fig. 1 they are specified as "нижний резак" and "верхний резак".

Which part on the illustrations is гребенки?

ridges///ridged pill-cutting/forming board/appliance

I am not sure whether the question refers to the ridges themselves or to the ridged board

option 2 from the patent itself: grooves/grooved

Figure 2 represents the metallic frame that surrounds the central wooden part and supports the grooved plate for forming the pills.

Note from asker:
Thanks for your suggestions. The question refers to the plates with ridged surfaces - please see this photo: http://vfl.ru/fotos/b354e08d15285884.html
So I suppose we can call those things "double-sided grooved plates", right?
