Based on my googling, the word is most often used for 'artisanal' bistros specializing in plättar (small crêpe-like pancakes popular mainly in Sweden and Finland; https://sv.wikipedia.org/wiki/Plättar)

I suspect that in your context, 'plätteri' may be used because the establishment wants to signal an artisanal vibe, in which case the word may not actually refer to anything concrete. That said, potentially they could also have a section of their kitchen dedicated only to making plättar, with a designated chef for the purpose.

Great point that I didn't consider, although expected size could be an issue ;-).
agree Deane Goltermann : I do like the 'mini-crepe' idea, esp. since it is a thing you can google and it is more European (for the local market). Being the prosaic type I might settle for 'Kitchen' instead of 'makery,' but if you're in a poetic license mood ...

agree Eva Bolinder : Depending on where you live in Sweden, full sized, smaller, and ovenbaked pancakes are called different things. Pannkakor/plättar/ugnspannkaka vs plättar/småplättar/tjockpannkaka. Heated discussions can occur! ;)

Not all that artisanal as a translation, but it might work for you. ;-)

Silver dollar pancakes

I won't jump directly into the fray on this fun little language question, but will add my 'fifty cents' to hopefully illuminate your question. In the US, pancakes of this size are actually colorfully (not colourfully) referred to as silver dollar pancakes. Thinner versions of the famous thick US pancakes the (close to) size of the mostly unused dollar coin. Served with strawberries and cream ... sounds like a trendy restaurant dish!!?
